John Gilbreth, owner of Pizza Tree, and his spouse Amanda Rainey, who runs Goldie’s Bagels, are set to purchase Main Squeeze, a popular vegetarian cafe in downtown Columbia. The changeover, which was announced last week, will take place on New Year’s Day.
Main Squeeze has long been a staple of Columbia’s vegetarian and vegan dining scene. Over the years, the cafe has evolved, with longtime owner Leigh Lockhart recently transforming the business into a smoothie bar and eco market. Gilbreth and Rainey plan to restore the full menu, aiming to keep 90% of the original dishes while adding their own 10% twist.
Gilbreth, who first ate at Main Squeeze 25 years ago when he moved to Columbia as a college student, shared a personal connection to the cafe. The meal he had there was a turning point in his experience of the city, he recalled fondly. This connection made the decision to purchase Main Squeeze feel like a natural next step for the couple.
Pizza Tree and Main Squeeze are located next to each other, with their buildings nearly connected. Gilbreth is excited to introduce new cooking equipment and ingredients across both businesses. Some ingredients, like the pickles, sauerkraut, and kimchi from Pizza Tree, will likely make their way to Main Squeeze. Additionally, Pizza Tree recently announced the introduction of a new vegan cheese and pepperoni on its menu.
The decision to purchase Main Squeeze came after casual conversations between Gilbreth and Lockhart. A recent visit to the cafe sparked renewed discussions, and the deal was made quickly. Gilbreth expressed confidence in his ability to take on this new venture, as Pizza Tree is in a strong place, both financially and with its loyal team. He also praised the employees who have been with Pizza Tree for years, noting their excitement at the opportunity to expand to Main Squeeze.
In a heartfelt Facebook post, Lockhart expressed her trust in Gilbreth and Rainey, saying they were the ideal people to continue the legacy of Main Squeeze. She emphasized that she wanted the cafe to remain a vegetarian establishment and that she was confident the new owners would maintain the cafe’s commitment to the community.
Gilbreth and Rainey are looking forward to carrying on Main Squeeze’s mission while introducing their own flavors to the cafe’s beloved menu.
