A new pizza place, Marilyn’s Pizza Slice, opened its doors two months ago in Midtown Sacramento. The restaurant, founded by TJ Bruce, who also owns Roscoe’s Bar & Burgers, Badlands, and The Depot, began serving New York-style pizza on October 30. Marilyn’s Pizza Slice offers pizza by the slice and whole 20-inch pies, each featuring one pound of cheese, according to manager Toby Malott.
Currently, the restaurant is open for dinner and late-night service from 5 p.m. to 2 a.m. on Wednesdays, Thursdays, and Sundays, and from 5 p.m. to 3 a.m. on Fridays and Saturdays. It is closed on Mondays and Tuesdays, though plans to operate during lunch hours are in the works, Malott said.
Malott, who has been in the restaurant industry for over 40 years, said this is his first venture into pizza. He spent weeks researching and testing pizza dough, discovering how delicate the ingredient can be. “I love pizza,” Malott said. “Every day I leave tired of it and come back craving it the next day.”
According to Malott, customers from New York and New Jersey have tried the pizza and left satisfied with its authentic taste.
The building housing Marilyn’s Pizza Slice has been in the owner’s family since the 1940s. The pizza place currently employs seven people, a number that will grow as the restaurant extends its hours. The price of a slice ranges from $5.50 to $8, while a 20-inch pizza costs between $33 and $43.
Bruce, who signed the lease for Marilyn’s Pizza Slice about three years ago, hopes the new restaurant will complement the bars and clubs he already owns. “We’re just trying to make the best pizza we possibly can and have a great time doing it,” Malott said. “Feed people, get them full, and make them happy. It boils down to that.”
