Domenick Calise, owner of Bucky’s Pizza, has been pleased with the response from Chatham residents since opening his pizza shop on Halloween 2024. His scratch-made sourdough pizza quickly became a local favorite. However, meeting the growing demand has presented some challenges.
While the round sourdough pizzas were popular, customers struggled to get their hands on the Detroit-style square pan pizzas. “We could only make 80 square pizzas a day, and I thought that would be enough,” Calise explained. “But we started running out in just 20 minutes. It takes two hours to cook them, and they’ve become incredibly popular.”
The Detroit-style pizza requires a 48-hour fermentation process, with each pizza rising individually in the pan. “It’s frustrating,” Calise said. “I didn’t have enough to meet demand, and it was a problem.”
To solve the issue, Calise increased his inventory of pans from 80 to 200, ensuring there would be enough square pizzas to go around. “Now, we haven’t run out of squares,” he said.
Starting January 8, 2025, Bucky’s Pizza will extend its hours. The new schedule will include Thursday through Sunday service, with hours of 4-8 p.m. on Wednesday through Friday, 12-8 p.m. on Saturday, and 12-7 p.m. on Sunday. While Calise expects busy nights on Friday and Saturday, with wait times of up to 90 minutes, the daytime hours on weekends should be more manageable.
Calise noted that while the round plain sourdough pizza remains a top seller, the Detroit-style square pizza continues to be in high demand. “The pepperoni hot honey pizza is also becoming a favorite,” he added. “We make fresh ricotta cheese daily with sea salt and olive oil, and that combination is popular, whether it’s on the round or square pizza.”
