Chicago is known for its diverse pizza scene, with deep dish and tavern-style pizza standing out among the city’s most popular choices. Despite some pushback on the names, these pizza styles have become iconic, helping local establishments differentiate themselves. However, branding alone can’t ensure quality—just ask Pizza Hut, which faced criticism for its tavern-crust pizza earlier this year.
One pizzeria that has stood the test of time is Alex’s Washington Gardens, located at 256 Green Bay Road in Highwood. Founded in 1932 by the Scornavacco family, the pizzeria has been a staple in the North Shore community. The Highwood Historical Society even claims it is the oldest pizzeria in Lake County. Over the years, Washington Gardens has gained a loyal following for its no-frills, family-friendly dining. On a recent weekend visit, the restaurant was bustling with customers of all ages.
Unlike the ultra-thin crusts popularized by newer tavern-style pizzerias like Crust Fund Pizza and Bungalow by Middle Brow, Washington Gardens offers a slightly thicker crust. The sauce, based on a Scornavacco family recipe, strikes a balance between sweetness and tang, differing from the sweeter styles found at some South Side spots.
Another distinctive feature is the use of traditional pepperoni. While pepperoni cups have become popular at many pizzerias, Washington Gardens sticks with classic pepperoni that doesn’t curl up in the oven. This approach sets the pizzeria apart from others that have adopted the pre-cut, labor-saving cup style.
For many in the area, Washington Gardens remains a beloved taste of home. However, as the popularity of Chicago’s tavern-style pizza grew, the restaurant’s owners saw an opportunity to expand. In 2024, they opened a ghost kitchen in Chicago’s Avondale neighborhood, introducing city residents to their pies. The team behind the pizzeria—siblings Ben and Jessie Glazer, along with Michael and Franny Kaulentis—took over the business in 2019. Recently, they rebranded the pizzeria to WG Pizza, as they aim to bring their style of tavern pizza to new locations.
Ben Glazer, who grew up on the North Shore, reflects on his past career as a vocalist for the band Left Undone, which toured Big 10 schools. He feels the same adrenaline running a restaurant as he did performing on stage. With plans to open additional restaurants, the Glazers aim to spread the word about tavern-style pizza across the country, though they are mindful that their Highwood location is unique.
In early 2024, WG Pizza will collaborate with several notable chefs. Max Robbins from Lettuce Entertain You Enterprises will debut a new pizza in February, followed by Won Kim of Kimski and Lilac Tiger in March, and Javauneeka Jacobs of Rick Bayless’s Frontera Grill in April. The pizzas will be available in both Highwood and Chicago.
Despite plans for expansion, Ben Glazer notes that they won’t be able to recreate the special atmosphere of their Highwood location, emphasizing that it holds a unique place in their hearts.
Alex’s Washington Gardens remains at 230 Green Bay Road in Highwood. WG Pizza is also available at 3517 N. Spaulding Avenue in Chicago for pickup or delivery via third-party services.
