A casual slice of pizza on a Monday morning sparked an unexpected business venture for David Hunegnaw and his friends, leading to the debut of Sourdough Pizza Bros, a new fast-casual pizza concept specializing in slow-fermented sourdough dough.
The shop officially launched yesterday inside the Bob Crane Community Center’s Core Café, located on the building’s first floor. The café, presented by local bakery Bake Me Happy, offers a variety of grab-and-go meals, drinks, pastries, and, of course, the new sourdough pizza.
Hunegnaw’s journey to launching Sourdough Pizza Bros began earlier this year when he tried a slice of sourdough pizza at his friend Ivan Isreal’s house. Isreal had started experimenting with sourdough pizza recipes for his gluten-free wife, and Hunegnaw, impressed by the flavor, immediately saw potential.
“I went over to his place, we had pizza, and I was like, ‘Oh my God, this pizza is the best pizza ever,’” Hunegnaw recalled. “I’m like, ‘Dude, you have to start a pizza company.’”
With 20 years of experience in the startup world, Hunegnaw quickly set to work, discussing the idea with his wife and developing a business plan. Confident in their concept, they reached out to Letha Pugh, owner of Bake Me Happy, who introduced them to Core Café, providing the perfect location for their new venture.
Hunegnaw has big plans for the future, hoping to create a franchise model that brings Sourdough Pizza Bros to underserved communities. “It could be someone who is 18 years old, someone who is 80 years old, as long as they have an entrepreneurial mindset, we’ll help them stand up their business,” he said.
For Isreal, the process of perfecting his recipe has been a valuable learning experience. “I’m a firm believer of repeating the same thing over and over until you become really good at it,” he said. “We want people walking away with an amazing experience, and to do that, you have to operate at a really high level, and you can’t do that without getting those repetitions.”
To start, the menu offers cheese and pepperoni pizzas, with plans to expand in the future. In addition to pizza, customers can purchase sourdough loaves and various spreads and dips.
Sourdough Pizza Bros operates out of Core Café, located at 3600 Tremont Rd. The pizzeria begins serving pizza at 10:30 a.m., though sourdough loaves are available all day.
