This April, Borough will welcome a new pizza destination with the opening of Spring Street Pizza on Tuesday, April 29. Created by Michelin-starred chef Tom Kemble, the restaurant promises to serve 18-inch New York-style pizzas, available by the quarter, half, or whole, with options for both dine-in and takeaway.
Spring Street Pizza blends the bold energy of New York’s iconic pizza joints with a distinctly London twist. The menu will feature a curated selection of pizzas, complemented by a range of distilled cocktails, wines, and beers. Located under the arches just off Southwark Bridge Road, the restaurant sits next to Omeara and Four Quarters, offering an intimate and stylish setting. With 19 covers and additional outdoor seating, the space is designed for everything from a quick slice during lunch to an evening spent enjoying pizza and drinks with friends.
A Storied Career in Fine Dining
Chef Tom Kemble brings over 15 years of experience in the world of fine dining to Spring Street Pizza. Having previously headed the Michelin-starred The Pass at South Lodge, Kemble also served as Head Chef at Bonhams, where he earned the restaurant its Michelin star just seven months after opening. His extensive experience includes stints at several restaurants ranked among the World’s 50 Best, such as Hedone in Chiswick and Sweden’s Fäviken.
Kemble’s love for pizza developed during the COVID-19 pandemic, when he began experimenting with elevating the classic dish using fine-dining techniques. In partnership with his wife, Tessa, he launched a pizza initiative during the lockdown, which laid the foundation for Spring Street Pizza. The restaurant’s philosophy centers around the belief that the secret to the perfect pizza begins with the dough—specifically, the Italian pre-fermentation technique known as Biga. The dough is fermented for 48 to 72 hours, resulting in a light yet flavorful base that’s crispy on the outside and airy inside, perfect for mopping up the housemade dips.
The Menu: Classic Pizzas with a Contemporary Twist
Spring Street Pizza offers a menu that combines classic New York-style pies with a modern twist. The pizzas are made with top-tier ingredients to deliver maximum flavor with minimal fuss. Signature dishes include the Sausage & Friarelli pizza, featuring pork and fennel sausage, friarelli, red onion, wild oregano, fior di latte mozzarella, Scamorza, Parmigiano Reggiano, and Calabrian chili flakes, as well as the New Yorker, topped with San Marzano tomatoes, Rebel Charcuterie pepperoni, Parmigiano Reggiano, hot honey, and basil.
For those who love to dip, Spring Street’s housemade dips are a must-try. Priced at £2.50 each, the dips include Green Goddess, Pesto Rosso, and Confit Garlic Aioli—crafted using fine-dining techniques to elevate the pizza experience.
Dessert offerings include soft-serve gelato made with Estate Dairy’s rich and creamy base, available with a variety of toppings such as sea salt caramel or extra virgin olive oil for a luxurious finish.

The wine list at Spring Street Pizza features bottles from independent winemakers specializing in Italian varietals, offering a perfect complement to the pizzas. Renowned mixologist Ana Reznik has also crafted a curated cocktail menu, which pairs beautifully with small plates such as Gildas, Marcona almonds, Italian charcuterie, and Caesar salad.
