Great Notion Brewing is joining forces with Pizza Thief to revamp the food service offerings at its N.W. 28th Ave. location in Northwest Portland.
Since its inception, Great Notion has been serving gourmet brewpub fare prepared in-house by its culinary team. However, CEO Paul Reiter announced that this menu will be available only until the end of the month. Starting May 1, Pizza Thief will take over the kitchen with its own unique menu.
For Pizza Thief, this collaboration marks the opening of its second location. The pizza establishment initially debuted in 2021 at 2610 N.W. Vaughn St., renowned for its pizzas featuring naturally leavened sourdough and whole grain crusts.
Tony Pasquale, co-founder of Pizza Thief, expressed excitement about the opportunity provided by Great Notion. He cited the increasing demand for their pizzas, prompting the need for a larger kitchen space. The partnership with Great Notion not only allows them to serve the brewery but also provides a larger kitchen as a commissary, facilitating future expansion across the greater Portland Metro area.
Commissary kitchens serve as central preparation sites for restaurants with multiple locations, streamlining operations.
This collaboration isn’t unfamiliar territory for Great Notion, as it previously partnered with Matt’s BBQ Tacos, a renowned food cart, to provide food at its Alberta Street location. Reiter emphasized the brewery’s focus on brewing top-quality beer, making partnerships with esteemed culinary establishments like Pizza Thief a natural fit.
Reiter stated, “At Great Notion, we’d like to focus on what we do best, which is brew the best beer in the world. We like to partner with like-minded businesses that are the best in their class, like Matt’s for BBQ tacos and Pizza Thief for pizza.”
The partnership between Great Notion and Pizza Thief promises to elevate the culinary experience for patrons at the brewery’s Northwest Portland taproom.
