Vero Chicago Pizza marked the soft opening of its seventh location today, located at 19975 N. John Wayne Pkwy., Ste. 110. The new outlet flipped on its “open” sign to welcome customers, focusing initially on online and mobile takeout orders.
Kitchen Manager Daniel Mejia, whose family owns the Maricopa franchise, expressed his excitement as the first order came in moments after opening. “We were like, ‘Yeah, we got one!’” Mejia said.
The soft opening serves as a test run before the grand opening, anticipated this weekend. Although no date has been confirmed, the staff is eager to start serving walk-in customers soon.
“We’re testing the water today,” Mejia explained. “We’ve been waiting for this moment. I’m just looking forward to making our food and having everybody taste how good it is.”
Vero Chicago Pizza operates daily from noon to 9 p.m., offering a wide range of menu options despite lacking a sit-down dining area. The extensive menu includes 18 specialty pizzas, each named after iconic Chicago landmarks. For instance, the Wrigley Field pizza features sausage, Italian beef, green peppers, and onions.
In addition to Chicago-style deep dish pizza, the restaurant offers traditional pizzas, pastas, sandwiches, and wings. Mejia personally recommends the Sears Tower pizza, loaded with veggies and sausage. “I love it because of all the veggies and sausage,” he said. “You get pretty much everything on that.”
As Vero Chicago Pizza continues to expand in metro Phoenix, the Maricopa location promises to deliver authentic Chicago flavors from a family with deep roots in the Windy City.
