Riko’s Pizza, known for its tavern-style pizzas, is expanding to Burlington, with plans to open a new location by the end of fall. The cousins behind the brand, CEO Rico Imbrogno and COO Luigi Cardillo, are eager to introduce their “bar pies” to the city, according to a recent press release.
The new restaurant will be located at 83 Church Street, which previously housed Pascolo Ristorante for nearly nine years. Pascolo relocated earlier this year to the historic Burlington Trust bank building at 120 Church Street, formerly occupied by Sweetwaters restaurant.
Riko’s Pizza specializes in tavern-style pizza, a type of pizza that originated in the 1930s but had largely fallen out of favor until Riko’s revival. The restaurant offers 10 unique pizza recipes, including their renowned Hot Oil pie.
Founded in Stamford, Connecticut, in 2011, Riko’s Pizza has since expanded to locations in New York, Massachusetts, and Florida, with a North Carolina location also in the works. The menu features made-to-order salads, Italian American appetizers, and a variety of pizzas.
The Burlington location will be Riko’s first in Vermont. The new establishment on Church Street will feature a dining area and a sports bar equipped with multiple TVs. Imbrogno and Cardillo believe Burlington is an ideal location for Riko’s Pizza, providing a welcoming atmosphere for family dinners, after-work drinks, and watching the big game.
