Founders Lorenzo Tron and Roberto Davoli have put extensive research and care into creating pizzas that cater to a wide range of dietary needs, including gluten-free, vegan, vegetarian, and halal options. Their goal is simple: to bring everyone together around the same table, regardless of dietary restrictions.

Tron recalls a moment that truly emphasized the importance of their mission. A family from Queensland traveled all the way to their Melbourne pizzeria after learning that Shop 225 was the first pizza shop accredited by Coeliac Australia. The family’s young sons, both severely allergic to wheat, were able to enjoy their first-ever pizza. The joy on their faces was unforgettable.

And why wouldn’t they be delighted? The gluten-free crust at Shop 225 is made from a mix of corn, rice, potato, and chickpea flour. It’s light, fluffy, and crisp, rivaling their traditional wheat-based crust.

For those who are dairy-free, Shop 225 offers house-made vegan mozzarella, and meat toppings can be replaced with halal options upon request.

While the pizzeria excels at classic pizza styles, they also offer more adventurous options. A standout is the 2807, featuring fior di latte, porcini, mushroom cream, and sausage. Even if you’re not managing dietary restrictions, the regular pizza dough—made with flour from Veneto and rested for 72 hours—is easy on the stomach. Tron jokes, “You can go for a run after eating it,” before quickly adding, “But you don’t have to.”

Shop 225 offers more than just pizza. Their gnocchi bites, inspired by a dish from Tron’s hometown of Trieste, are a must-try. These fluffy, crispy bites can be enjoyed with a sprinkle of salt, as part of a seafood fritto misto, or even with Nutella for dessert.

The menu also features house-made fettuccine and scialatielli, with gluten-free options available. The Norcina fettuccine, rich with mushrooms, pairs perfectly with a glass of Italian red wine and a Sicilian-style radicchio salad with gorgonzola and oranges.

Shop 225 is a cozy, welcoming neighborhood spot where Tron’s warm hospitality shines. He often sits with regulars, jokes with newcomers, and reminds everyone of the playful note on the menu: the last table of the night might be asked to help with the dishes.

Before you leave, make sure to try the desserts. The tiramisu is alcohol-free, and there’s a coeliac-friendly version with house-made ladyfinger biscuits. The chocolate salami is a nostalgic treat from Tron’s childhood, just like the one his nonna used to make. “I always enjoyed it, so I thought you might, too,” Tron says, capturing the friendly spirit that defines Shop 225.
