HUNTERTOWN — Salt & Pepper’s Restaurant has opened its doors at 15805 Lima Road, occupying the former Timmy’s Pizza and BBQ location. The new eatery features a scratch kitchen, emphasizing freshly prepared dishes from raw, natural ingredients.
Co-owners and chefs Susan Lindemann and Leonard Easterly are committed to making 90% of their ingredients in-house. “We are not buying any prepared sauces,” said Easterly. “Everything will be fresh and made from scratch.”
The restaurant’s menu is still being finalized but will include both traditional and artisanal pizzas. Noteworthy options will feature unique combinations like pickle bacon pizza, which combines dill pickles, bacon, and a ranch-like sauce without traditional pizza sauce or mozzarella cheese. “It might sound odd, but it’s incredibly good,” Lindemann remarked.
In addition to pizzas, the menu will offer a variety of items including toasted sandwiches such as a Cuban and a hot Italian sandwich. Salads, like the chicken berry salad with berries, goat cheese, and candied pecans, will include upscale protein options.
Appetizers will include Texas Twinkies, which are stuffed jalapeños wrapped in smoked bacon, and a dip featuring artichokes and spinach. All soups will be homemade from scratch, including the stocks.
The restaurant will also smoke a range of meats, including brisket, pork butt, ribs, chicken, and fish. Initially, the restaurant will use established local suppliers, with plans to source products locally in the future.
Lindemann, a Huntertown native, and Easterly bring extensive experience in the food industry. Lindemann aims to contribute to the community through partnerships with organizations like Charis House. She also hopes to pass the restaurant on to her daughter when she retires.
Salt & Pepper’s opened after a summer of renovations, with the Board of Health inspecting the property in early August. The restaurant is now open daily with varying hours:
Monday-Wednesday: 11 a.m. – 8 p.m.
Thursday: 11 a.m. – 10 p.m.
Friday-Saturday: 11 a.m. – midnight
Sunday: 2 p.m. – 7 p.m.
