If you’re a fan of pizza, especially Neapolitan-style, finding a truly authentic place can be challenging. Neapolitan pizza, originating from southern Italy, requires a special oven that reaches extremely high temperatures—something not commonly found in Dubrovnik. However, I recently stumbled upon one such hidden gem: Bura Bistro.
Nestled in Dubrovnik’s historic Old City, Bura Bistro is named after the cold northern wind that sweeps down from the mountains. Its prime location is hard to beat. Situated behind Dubrovnik’s iconic cathedral, the bistro is in the heart of a lively area filled with cafés and restaurants.
The advantages of Bura Bistro’s location include its central position, shade from the heat, and picturesque surroundings of ancient stone buildings. The bistro features a spacious outdoor terrace, making it a comfortable spot to enjoy a meal.
But the real standout here is the Neapolitan pizza. True Neapolitan pizza is distinguished by its use of only four ingredients—flour, yeast, water, and salt. Achieving the perfect balance requires skill and experience. Bura Bistro’s head chef, Ante Jonjić, explains, “We imported our pizza oven from Italy, which can reach temperatures of up to 520 degrees. The pizza is baked for just 70 to 90 seconds at these high temperatures.”
Bura Bistro’s menu boasts a variety of creative toppings, reflecting the chef’s imagination. For instance, they offer unique options like smoked tuna and slow-cooked rump steak. One particularly interesting topping is mango, combining sweet and sour flavors in a way I hadn’t experienced before.
