Leo Brill, the chef and owner of Alberta’s popular Dungeons and Dragons-themed pizza cart, Paladin Pie, is set to open a new cart named Oathbreaker Pie. This new venture will be located in the Hinterland Pod on SE 50th Avenue and is scheduled to open on Friday, November 1. The name Oathbreaker continues the Dungeons and Dragons theme; in the game, an oathbreaker refers to a character who has abandoned their oath, in this case, the commitment to wood-fired pizza.
While Brill will serve as chef at both carts, Oathbreaker will feature a different menu. It will utilize a gas oven instead of Paladin’s wood-fired setup. Oathbreaker aims to serve New York-style slices with crispy bottoms that can hold up under the weight of toppings. In contrast, Paladin is known for its chewy Neapolitan pizzas. Brill has adjusted his recipe for the new style but will continue to use a slow-fermented sourdough.
In addition to pizzas, Oathbreaker will offer classic New York pizzeria dishes such as garlic knots, Stromboli, and Caesar salad. Popular items from Paladin, including the buffalo chicken pizza, will also be available.
Brill started Paladin Pie as a pop-up during the pandemic after losing his job at the Portland pizzeria Oven & Shaker. He developed his sourdough pizza formula at home, creating a two-day fermentation process at about 70% hydration.
During its pop-up phase, Paladin Pie raised funds for mutual aid organizations at each event. While this fundraising model has become challenging for a permanent business, Brill hopes to return to it when financially possible. For now, he is focused on providing living wages and healthcare for his staff, feeding guests who cannot pay, and donating pizzas whenever he can.
