Quebec City’s New Go-To Spot for Authentic Italian Pizza

Tonino Pizza Gastronomica opened its doors in November 2023, bringing chef Anthony Travaglini’s vision for authentic Italian pizza to Quebec City’s Sillery neighborhood. Known for his nearby restaurant, Tonino, Travaglini has brought the same dedication to Italian cuisine to his pizzeria, creating a place where his passion for pizza shines.

“I’ve always loved pizza, and I wanted to create a flavor that felt true to me here in Quebec City,” Travaglini explains. “There was a specific taste I was looking for, and now I can share it with others.”

Originally designed for takeout with a focus on artisanal ingredients, Tonino Pizza has expanded to include a cozy dine-in area and a private lounge, seating up to 40 guests. Half of these seats are in the private lounge, making Tonino Pizza an inviting spot for gatherings with friends. “We’re building a true restaurant atmosphere where people can come together,” says Travaglini.

The pizzas at Tonino are crafted by Luigi Coronella, a skilled pizzaiolo from Italy. Coronella, who manages everything from dough preparation to wood-fired baking, collaborates with Travaglini on recipe development. The menu changes occasionally, but staples like the Margherita—dubbed the “mother pizza”—are always available. One standout is the Mortadella pizza, topped with pistachio pesto, fior di latte, mortadella, and basil. Tonino Pizza also offers a selection of Italian street food-inspired options, including croquettes and the “pannuzini”—a satisfying fusion of sandwich and pizza.

“We’re embracing the rustic charm of Italian street food,” says Travaglini, describing how the menu reflects the flavors of Naples and Salerno.

Drinks at Tonino Pizza are curated by Candice Mbende, who pairs classic cocktails and private-import wines to complement the pizzas. The restaurant also features a small grocery section with imported Italian products.
